Creamy Masala Pasta
Creamy pasta meets spicy Indian masala pasta dish that explodes with flavour and extremely satisfying

Ingredients
  • Penne Pasta
  • 10 cashews soaked in advance
  • ½ onion, chopped
  • 2 garlic cloves
  • ½ inch ginger, minced
  • 2 tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp garam masala
  • ½ tsp red chili powder
  • ½ tsp ground turmeric
  • 1 tsp Kasoori Methi
  • Spinach

Instructions
  1. Cook pasta to package instructions
  2. In a pan over medium heat, add oil and then onion, ginger, and garlic. Saute until onion is transparent. 
  3. Add tomatoes and all spices except kasoori methi and Cook until tomatoes are soft.
  4. Blend the sauce with the soaked cashews. 
  5. Pour the sauce back into the pan and heat on medium. Add about 1/4 cup water to adjust thickness of sauce.
  6. Add kasoori methi add a handful of spinach and the pasta. Mix it all together and serve!
