Mutton Chops French Cut 

The Cut - Lamb Rib meat is super tender and very flavorful. Basically, a lamb rib chop is what you’d get if you cut a rack of lamb up into chops. Because they’re so tender and petite they only need to cook for a few minutes on each side, making them an ideal fast-and-fabulous party food. 

Grilled Masala Lamb Chops Recipe

Ingredients
  • 1 rack of lamb (8-rib size)
  • 1 small onion
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup cilantro, finely chopped, plus
  • 1/4 cup cilantro, for garnish
  • 1 cup non-fat yogurt
  • 3 tablespoons lemon juice
  • 2 teaspoons turmeric
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin seeds
  • 2 teaspoons ground coriander seeds
  • 1 teaspoon salt, or to taste
  • black pepper
  • cayenne pepper
  • 1 lemon, cut into wedges for garnish

Method
  1. Mix together the vinegar, salt, pepper, garlic, onion and olive oil in a large resalable bag until the salt has dissolved.
  2. Add lamb chops, toss until coated, and marinate in refrigerator for 2 hours.
  3. Preheat an outdoor barbecue for medium-high heat. Remove meat from the marinade and leave any onions on that stick to the meat.
  4. Discard any remaining marinade.
  5. Wrap the exposed ends of the bones with aluminium foil to keep them from burning.
  6. Marinate the lamb for 8-24 hours (the longer the better)
  7. Cook on the barbecue to desired doneness, about 3 minutes per side for medium.
  8. The chops may also be grilled in the oven about 5 minutes per side for medium
